Hanukkah Latkes
What You’ll Need:
4 large potatoes, scrubbed and unpeeled
2 eggs
1 chopped onion
1/8 teaspoon baking soda
1½ teaspoons salt
1 tablespoon matzah meal or dry breadcrumbs
1 tablespoon flour
What to Do:
Grate the potatoes. Drain well.
Put some oil in a pan and heat it. Add the onions. While the onions are frying, mix the potatoes, baking soda, salt, matzah meal, flour, and pepper in a bowl.
Beat the eggs in a separate bowl, then mix them with the rest. Drain and add onions.
Using a large spoon, drop the latke mixture onto the pan. Add more oil if necessary.
When one side is brown, flip the latke over with a spatula. Make sure to serve with applesauce or sour cream for dipping. Yum!
